today I made this black bean chocolate cupcakes with a vegan mint cashew cream frosting 🥰😋

I actually can't believe how well these turned out the mint frosting and chocolate cake go together so well! you wouldn't even know there's black beans in them! .
black beans add extra fibre and nutrients such as potassium in the cakes and I used cashews for a frosting for a dairy free alternative but it also adds extra nutrients such as magnesium 🙌

I love discovering new ingredients to work with while exploring new and interesting flavors from the world. This recipe uses fermented black beans (mostly black soy beans). They are an iconic Chinese ingredient with an unusual flavor and aroma.

Fermented black beans are normally soaked and mashed before they are added to any number of Chinese-style soups. Personally, I prefer to soak them which removes some of the salt, leave then whole and mix with ginger, garlic and chili peppers…like I did to make this delicious salad with tofu and green onions.

✅Ingredients⁣

• 1 tablespoon vegetable oil⁣
• 1 small yellow onion diced⁣
• 3 cloves garlic minced⁣
• 1/2 teaspoon ground cumin⁣
• 1/4 teaspoon cayenne pepper optional⁣
• 2 (15 ounce) cans black beans undrained⁣
• 1/4 teaspoon salt⁣
• 1/4 cup fresh cilantro leaves chopped⁣



✅Instructions⁣

1️⃣Heat a heavy skillet over medium-high heat. Add in the oil and let heat briefly.⁣ ⁣
2️⃣Add in onions and saute for 5 to 7 minutes until soft.⁣ ⁣
3️⃣Add in minced garlic, cumin, and cayenne pepper and saute another 60 seconds.⁣ ⁣
4️⃣Add in un-drained black beans and juices from can. Let simmer for 5 minutes. Serve hot topped with fresh cilantro.⁣ ⁣ ⁣ ⁣

Apart from the fact that it has ZERO fiber (have fun being constipated) and 74 mg cholesterol (one of the key factors to raising your LDL cholesterol), it also does a shitton of damage to the environment just to make this stuff.

SWEET POTATO, BLACK BEAN, KALE & QUINOA BOWL. I’ve been making yummy combo for quite a few years now so I thought it was time to share the recipe. Protein packed and super nourishing, the perfect meal or side dish. Full recipe is on the blog with link in bio!

Good morning and happy Friday everyone! Coming at you with yet another meal prep idea! This time its vegan teriyaki jackfruit burrito bowls and they were super tasty for this weeks lunches! Makes 4 🙂

Ingredients
* 2 heads baby cos lettuce
* 1 packet teryaki jackfruit
* 2 tomatoes
* 1/2 red onion
* juice of 1 lime
* fresh coriander
* 1 avocado
* 2 cans of black beans
* 1 can of corn

Method
1. Wash the baby cos lettuce then chop and divide the amount between four containers
2. Spray a pan with extra virgin olive oil and place on stove top on medium heat. Add the teriyaki jackfruit and use a spatula to break into smaller pieces. Cook according to packet
3. Dice the tomatoes, onion and coriander and place into a small bowl. Squeeze the lime juice into the mixture and stir well
4. Drain and rinse the canned corn and black beans. Set aside
5. Mash the avocado in a small bowl. Set aside
6. Now it’s time to construct the bowls! Divide all ingredients (tomato mix, corn, black beans, jackfruit and avocado) into the four containers evenly and top with fresh coriander
7. Easy, simple and delicious!! Enjoy!

Black Bean Burgers 🍔

📝 Ingredients
(6 Servings)
* ½ cup prepared salsa
* 2 15 ounce cans black beans rinsed/dried
* ½ cup breadcrumbs
* ¼ cup red onions grated
* 2 eggs beaten
* 2 tablespoon mustard
* 1 teaspoon ground cumin
* 2 tablespoon olive oil divided 👨‍🍳 Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper. Spread beans evenly on the baking sheet and bake for 12-15 minutes until slightly dried out, mixing halfway through. Transfer beans to a large bowl and mash with a potato masher.
2. Place salsa in a fine-mesh sieve and stir a few times to drain excess liquid. Transfer the salsa to the bowl with the black beans. Add the breadcrumbs, grated onions, eggs, mustard and cumin. Place in fridge for 10 minutes to set.
3. Form the mixture into patties with about 1/3 cup mixture in each. This should make about 6-8 patties.
4. Cook on Stovetop: Heat half the oil in a large nonstick grill pan or skillet over medium heat. Add 4 patties and cook for 4-5 minutes per side until browned.
5. Bake in Oven: Place patties on a lined baking sheet and bake at 375°F for 20 minutes.
6. Serve the burgers on buns with your favorite toppings.

Salmon burgers 🍔 🐠

(4 servings)
* 1 pound skinless boneless salmon
* 1 tablespoon vegan mayonnaise
* 2 teaspoons Dijon mustard
* Zest of one lemon
* 2 scallions chopped
* ½ cup breadcrumbs
* Salt and black pepper
* 2 tablespoons olive oil
* Bun, lettuce and tartar sauce for serving

Instructions
1. Cut the salmon into large chunks, and place in the bowl of a food processor. Add the mayonnaise, Dijon mustard and lemon zest and blend, stopping to scrape down the sides as necessary, until mixture becomes pasty.
2. Fold in the scallions and breadcrumbs and season with salt and pepper.
3. Shape into four burger patties.

4. Heat olive oil on medium heat on a large nonstick skillet with olive oil. Cook the salmon burgers for 4 to 5 minutes on each side, turning once.

5. Serve on burger buns with tartar sauce and lettuce, if desired.
