Sunday; the perfect time to indulge in a fry stuffed falafel pita!

I’ve been watching a bunch of videos about how people make their own hot chocolate from scratch. So I figured I’d give it a try 🤩. It came out pretty damn good and it’s vegan so my plant-based peeps can enjoy it too. And people who can’t handle milk or milk products. Not gonna lie it was a long ass process to make this but it was worth it 🤤🤤 cause this jawnnn was goooood!

Alhumdulillah for this lovely rainy weather 🌧 and it definitely calls for some comfort food. I finally tried @inapaarmanskitchen sticky malva pudding. It was absolutely delicious and oh so comforting 😍😍😍definitely something to keep at home for a quick yummy dessert 🥰🥰

لين تحمرو وخلطتهم وحطيت الملح ما ياخذ وقت لا تطبخونه وايد دقايق فقط.
بعدها حطيت خبز اسمر ومستحهم بزيت الزيتون وحطيت الحمسة وبالفرن فوق وتحت.
زينوها باللي تحبون الطعم روووعه لان ما غيرنا طعم الروبيان بكثرة البهارات.
جربوها لذيذ وبالعافيه.

Soup season is kind of my favorite season, but really something feels like it’s missing without the cornbread. So…this year we made this Paleo “Cornbread” to help make it feel extra cozy! And we teamed up with @bobsredmill ( #ad) to bring this recipe your way! The actual corn kernels are entirely optional - so don’t use them if you don’t tolerate them and need to keep it fully Paleo. It’s great both ways! ⁣

1 cup blanched almond flour⁣
1/2 cup coconut flour⁣
1 tsp paleo baking powder⁣
1/4 tsp sea salt⁣
1/4 cup raw local honey⁣
1/2 cup grass-fed butter or ghee, melted (or coconut oil for dairy-free)⁣
3 eggs⁣
1 cup yellow corn kernels (optional, omit for paleo and grain-free)⁣

1- Preheat oven to 375° Fahrenheit, and grease a 8" cast iron skillet or 8×8" square baking dish and set aside.⁣
2- Place all of the ingredients, except for the corn (if using) in a large mixing and mix with a fork.⁣
3- Fold in corn (if using), and transfer to greased skillet or dish. Smooth the top and place in the oven.⁣
4- Bake for 20-25 minutes until the top turns golden brown, and a knife or toothpick comes out clean. ⁣
5- Remove from oven and cool. Serve – it's great with some grass-fed butter or ghee and honey drizzled on top! We whipped honey and butter together to go on top for the pictures in this post! ⁣

Cinnamon Eggnog! The fillings are made with actual eggnog. I couldn’t decide on what type of flavor I wanted the fillings to have so I made two different kinds of ganache, the outer ganache is cinnamon eggnog & the center ganache is rum/nutmeg eggnog.

Truth Rant: While I was taking photos of these at 5am yesterday I was crying angry tears (or tired tears because I had to wake up at 7am 🙃) because I couldn’t get them to stack correctly & I felt like I was playing drunk Jenga except it wasn’t fun!

5 ingredient, ultra creamy choc tahini vegan ice cream with cookie chunks by @panaceas_pantry 💜
You’ll need:

2 x 400mL coconut cream (full fat)
1 x 400mL coconut milk
1/2 cup cacao powder
1/2 cup pure maple syrup
1/2 cup hulled tahini
1 Tbsp vodka (optional)
8 store-bought or homemade vegan cookies (optional)
1. The night before, put ice cream maker in the freezer, and chill the coconut cream and milk in the fridge.
2. The next day, add coconut cream, coconut milk, cacao, maple syrup and tahini to a blender and blend until smooth. Transfer to a large metal bowl, and chill in the freezer for 15 mins.
3. Remove ice cream bowl, and set up your ice cream maker, then add chilled ice cream mix and churn for approx 45 mins (or follow your ice cream makers instructions). At this stage, the mix should look like soft serve. Break up cookies (if using), and pour into the churning ice cream, and allow to incorporate (it should only take a few minutes).
4. Transfer ice cream to a 2L metal container, then use baking paper (or a reusable silicone mat, or a recycled, food-safe plastic bag) to cover the top. Freeze for at least 3 hours, before serving. #bestofvegan

Gluten-free chocolate cranberry Christmas cake by @nm_meiyee ♥️
1 cup & 2 tbsp all purpose gluten free flour
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
3/4 cup coconut sugar or brown sugar
1 cup almond milk, room temperature
1/3 cup coconut oil
1/2 tbsp white vinegar
1 tsp vanilla bean extract
1/4 tsp salt
1/2 cup cranberries .
Preheat the oven to 170c. Prepare a cake pan and set aside.
In a large bowl, sift flour, cocoa powder, sugar, baking powder, baking soda, salt and whisk to combine. Add in milk, vanilla, coconut oil, white vinegar. And until well combined. Gently, fold in cranberries. Scoop batter into prepared pan. About 3/4 full. Bake for 20 mins or toothpick comes out clean. Let cool completely.

VANILLA CRESCENT COOKIES by @nourishmybliss 🍪🌙
(makes 15 cookies)
100g ground almonds or ground hazelnuts
120g gluten-free flour blend
3 heaped tbsp (solid) coconut oil
90ml maple syrup
1 vanilla pod (or 1 tsp vanilla powder)
Tiny pinch of salt
Preheat your oven to 175C and line a baking tray with parchment paper. Mix the ground nuts, flour, salt and the pulp of 1 vanilla bean (or 1 tsp powder or extract) in a big bowl. Add the solid coconut oil and maple syrup and knead with your hands until well combined. Take small chunks of the dough and roll it in the palms of your hands to create a little cookie sausage 🤓 Form into crescents on the baking tray and bake for 15 -18 minutes. Let cool and dust with powdered sugar + vanilla if desired! They taste great without it too ☺️ You can easily double or triple the recipe to make bigger batches. Enjoy!

Vegan Caprese Lasagna Roll Ups by @thevegansara 🧡
What you need: 6 Lasagna noodles cooked al dente For the Ricotta: 1 cup water, 1 cup slivered/blanched almonds, 1 cup cashews, 2 tbl nutritional yeast, 1 tbl apple cider vinegar, s/p to taste, 1/4 cup sun-dried tomatoes (no oil) rehydrated in water 15min- then finely chopped, 1/4 cup chopped basil, 1 1/2 cup shredded mozzarella, 2 cup marinara sauce What you do: 1. Cook noodles in boiling & well salted water cook till al dente. Drain & leave noodle flat and ready to be rolled
2. Ricotta: in high speed blender combine water, cashews, almond, nutritional yeast, vinegar, s/p-process 20 sec to get a ricotta like consistency. You can also use a food processor, but nuts need to be soaked 4-6 hr prior
3. In a mixing bowl, combine ricotta, sundried tomatoes, basil, & 1 cup mozzarella, s/p to taste. Mix well.
4. using a 8x8 in pan, add 1 cup marinara sauce & spread evenly
5. On a clean work surface, take a lasagna noodle, evenly spread 1/3 cup Ricotta mixture the length of the noodle. Roll. Place in pan seam side down. Repeat.
6. Add 1 cup Marinara sauce to the tops of the roll ups, and about 1/2 cup mozzarella cheese
7. Then cover pan with foil, bake 350 F for 40 min. Enjoy!! I topped my lasagna with extra fresh basil & some balsamic reduction to give it that extra caprese flavor! #bestofvegan

✖️RECIPE for Sweater Cookies: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup vegan butter or refined coconut oil at room temp
1/2 cup coconut sugar
1/4 cup maple syrup
1/2 teaspoon blackstrap molasses
1 teaspoon vanilla extract
1/4 cup non dairy milk
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
Pinch sea salt
1/2 cup vegan chocolate chips
3 Tablespoons chopped crystallized ginger
1/4 cup raw pumpkin seeds
1/4 cup dried cranberries
Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your oven to 350 degrees Fahrenheit. Line 2 baking sheets with parchment paper.
In a small bowl mix together chocolate chips, crystallized ginger, pumpkin seeds and cranberries and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Make sure your butter or coconut oil is room temperature. Beat butter or oil, coconut sugar, maple syrup, blackstrap molasses, non dairy milk and vanilla extract in a large bowl until creamy. Add flour and baking soda to the bowl and beat again until well combined. Stir chocolate chip mix in to the batter.
Scoop cookie dough by the rounded tablespoon onto parchment lined baking sheet. Makes 2 dozen cookies. Bake 11-12 minutes. The cookies may look undercooked, but remove them and let them cool before eating.
