What’s everyone eating today?!?

5 ingredient, ultra creamy choc tahini vegan ice cream with cookie chunks by @panaceas_pantry 💜
.
You’ll need:

2 x 400mL coconut cream (full fat)
1 x 400mL coconut milk
1/2 cup cacao powder
1/2 cup pure maple syrup
1/2 cup hulled tahini
1 Tbsp vodka (optional)
8 store-bought or homemade vegan cookies (optional)

Method.
.
1. The night before, put ice cream maker in the freezer, and chill the coconut cream and milk in the fridge.
2. The next day, add coconut cream, coconut milk, cacao, maple syrup and tahini to a blender and blend until smooth. Transfer to a large metal bowl, and chill in the freezer for 15 mins.
3. Remove ice cream bowl, and set up your ice cream maker, then add chilled ice cream mix and churn for approx 45 mins (or follow your ice cream makers instructions). At this stage, the mix should look like soft serve. Break up cookies (if using), and pour into the churning ice cream, and allow to incorporate (it should only take a few minutes).
4. Transfer ice cream to a 2L metal container, then use baking paper (or a reusable silicone mat, or a recycled, food-safe plastic bag) to cover the top. Freeze for at least 3 hours, before serving. #bestofvegan

NO-BAKE PEANUT BUTTER TRUFFLES!🥜 Only 7-ingredients and 30 mins for ultra chocolaty and decadent truffles. Vegan, gluten-free, and sugar-free too. You’re checking all the boxes for holiday gatherings.(Though you'd never think it!😜). I've copied the recipe below👇, and you can find it on the blog (link in profile). 1 cup (250g) all-natural peanut butter, smooth
1/2 cup (50g) gluten-free oats
2 tsp ground cinnamon
1/2 tsp sea salt, finely ground
2/3 cup medjool dates, pits removed (approx. 12)
1/4 cup (60) maple syrup
1 cup (175g) 70% semi-sweet chocolate or other dark chocolate of choice
1 tsp coconut oil
sprinkles (optional for topping)

1 In a food processor combine peanut butter, oats, cinnamon, salt, dates and maple syrup. Process until smooth and dough like. Roll batter into bite-sized balls, about the size of a ping-pong ball, and place in the fridge to chill.
2. Melt chocolate by adding 2 inches water to a small saucepan and bring to simmer. Place a heatproof glass bowl on top of the pot, making sure the bottom of the bowl is not touching the simmering water. Add dark chocolate and coconut oil to the bowl and stir gently until melted and combined.
3. Remove truffles from fridge and line a baking tray with parchment paper. Roll truffles in melted chocolate, using a spoon to manoeuvre the balls to coat entirely in chocolate. Place onto parchment paper. Optional to top with candied sprinkles.
4. Continue process of rolling truffles in chocolate until you have covered all the truffles with chocolate. Place truffles back in the fridge to chill, until chocolate has hardened (approx. 30 minutes).

HAPPY NATIONAL BROWNIE DAY, try this five minute recipe #FACTS DEC. 8, 2019 - #Brownie in a Mug Recipe

Prep time: 3 minutes. Cook time: 2 minutes. Yield: Makes one serving

Some #mugs don't #microwave well because there is metal in their ceramic glaze. They'll work but they may get very hot. Best to use a plain old everyday un-fancy mug. A regular 12 to 16 ounce mug will do fine

INGREDIENTS
1/4 cup #flour (30 g)
1/4 cup sugar (50 g)
2 Tbsp (13 g) cocoa (natural, unsweetened)
Pinch of salt
Tiny pinch of #cinnamon
1/4 cup water (60 ml)
2 Tbsp canola oil, #vegetable oil, or melted butter
1/8 teaspoon vanilla extract
1 small scoop of #icecream or 1 or 2 teaspoons heavy whipping cream to serve

METHOD
1 Add the dry ingredients to the mug and stir: Place flour, sugar, cocoa, salt, and cinnamon in a microwave safe ceramic mug. Stir with a fork or spoon to mix well and break up any clumps.
2 Add the wet ingredients and stir: Add the oil, water, and vanilla to the cup and stir until the mixture is smooth and there are no lumps.
3 Zap in microwave: Place in microwave and heat on high until the mixture is cooked through, about a 1 minute and 40 seconds for a 1000 watt microwave, or 1 minute 10 seconds on a 1650 watt microwave.
You may have to experiment and adjust the time for less or more powerful microwaves. If you don't know the power level on your microwave, start with 60 seconds and increase until the brownie is done. It should still be moist when cooked through, not dry.
4 Top with ice cream!
