Blade steak, simmered on low heat for 4 hours in beef stock with 18 whole hot pot spices. I use a giant tea egg to let the spices draw in the broth. So tender and fyll of complex flavors, really delicious.
Served with steamed green beans that were cooked with minced meat and king oyster mushrooms, seasoned with soy sauce. The king oyster mushroom is one of the most delicious mushrooms, it's so umami and the texture is very pleasant.

A super easy and decadent 4 ingredient keto no bake cheesecake fluff that is layered with my favorite keto crumble!

Prep Time: 10 minutes Total Time: 10 minutes Servings: 4 Calories: 389kcal

INGREDIENTS:
2 Atkins Lemon Bars or 1 Cup Keto Granola
1 Cup Heavy Whipping Cream
1 8 ounce Brick of Cream Cheese, Softened
Zest of 1 Lemon
1/2 Cup Granular Sweetener
INSTRUCTIONS:
Make the Crumble
Chop the Atkins Lemon Bars with a knife until they resemble a crumble. (skip this step if using granola)
Make the Mousse
Add the heavy cream to a stand mixer and whisk until stiff peaks are formed. You can also use a hand mixer or whip by hand with a whisk.
Remove the whipped cream to a separate bowl and set aside
Add the softened cream cheese, zest, and sweetener to the stand mixer bowl and beat until smooth.
Pour the whipped cream into the stand mixer bowl with the cream cheese. Stir gently with a spatula until it is halfway incorporated. Use the stand mixer to finish whipping until smooth.
Serve
In 4 glasses, add 1/3 of the crumble, followed by 1/2 of the cheesecake mousse. Complete 2 more layers and then top with the remaining crumble.

Nutrition: Listed nutrition is for just the no bake cheesecake mousse.
Sweetener: This recipe works with either powdered Swerve or Powdered Lakanto sweetener.
Crumble: You can choose any low carb bar you like...I like the Lemon Atkins Bar. Here is a list of other keto granola bars.
Softened Cream Cheese: Make sure your cream cheese is really soft or your mousse will be lumpy.
Lemon Zest: If you prefer, you could make this a vanilla mousse by eliminating the lemon zest and adding 1 teaspoon of vanilla extract.

Breakfast. My hubby and I fast every day until about ‪1pm‬ so don’t often get to eat breakfast. On our 36 hour fast days we get to break the fast with breakfast and it’s usually a wholesome bowl of porridge topped with homemade granola. I’ve had loads of requests for both recipes, so here you go.

FOR THE PORRIDGE
1/2 gluten free rolled oats
1/4 cup quinoa flakes
1 cup coconut/almond  milk
1 tsp maple syrup (or more to taste)
1/2 mashed banana
1 zucchini peeled and grated
2 Tbs seed/grain mix (1/2 cup sprouted buckwheat, 1/4 sprouted sunflower seeds, 2 Tbs flaxseeds, 2 Tbs chia seeds – blitzed in a blender to fine powder)
1 Tbs almond butter
1 tsp cinnamon
Pinch of salt

Soak oats in mineral water overnight and rinse in the morning before use (this breaks down the anti-nutrients – reducing phytic acid and helping break down the starch). Add to a pot with the rest of the ingredients, bring to a boil and then reduce heat. I like to simmer on a low heat with the lid on stirring frequently to get the porridge nice and creamy.
Serve with a dash of coconut oil, your choice of coconut/almond milk and a generous helping of granola.

APRICOT, PISTACHIO, COCONUT AND CARDAMOM GRANOLA
1 cup gluten free rolled oats (I sometimes omit this if I’m keeping the granola carb free)
1 cup pistachios - crushed
1 cup sliced almonds
1 cup crushed hazelnuts
1 tsp cinnamon
1 tsp cardamom
1 cup coconut flakes
1/4 cup peanut butter
1/3 cup coconut oil
2 Tbs of sesame seeds
¼ cup pumpkin seeds
3 tbsp of @silan date syrup
1/2 cup sun-dried apricots chopped
Pinch of salt

Preheat the oven to 180°C and line a large baking tray paper. Mix oil, syrup and peanut butter on a low heat on the stove. Place all dry ingredients in a bowl and add the oil and maple syrup mixture. Mix well to coat all the dry ingredients.Bake for 15 minutes (check halfway and give the baking tray a mix to make sure the mixture cooks evenly). Allow to cool completely and store in a large jar.

This grilled garlic honey chipotle salmon recipe is my go-to when I’m craving something sweet + spicy. And if you let it cook an extra minute or two, you get those good good crispy edges, too 🔥👌🏻.

#whatsonmyplate: grilled honey garlic chipotle salmon: in a bowl, combine 1 tbsp. honey (I used manuka), 1/4 tsp. chipotle chili powder, 1 tbsp. melted ghee or butter, a pinch or salt + a pinch of pepper; spread evenly over two 4-6 oz. salmon filets (you can easily double this to serve four) 2) heat grill for ~5 minutes; brush salmon with melted ghee or avocado oil; grill on each side for 4-5 minutes, or until slightly brown and crispy 👌🏻 •• parmesan & garlic butter hasselback potato, fanned (recipe in a previous post) •• grilled asparagus.

Healthy food doesn’t have to be boring. A little Thursday Throwback to my favorite powerbowls of the past year! These always hit the spot and are a filling, nutrient dense, and “whatever diet you want to call it” friendly 🤩

1.Air fried spice crusted salmon with medium boiled eggs 🍳, cukes, cherry hot peppers, green beans, and some hemp hearts.

2. Lamb with cucumber 🥒 mint yogurt,walnuts, fresh herbs, and greens 🥬 .
.
3. Spicy shrimp 🍤 , Brussels sprouts, avocado 🥑 and soft boiled eggs 🥚 over greens.
.
4.Lemon 🍋 garlic air fried salmon with avocado 🥑 , cherry tomatos 🍅 , eggs, and greens.

5.Lamb with power greens, fried halloumi, herbs, and tons of veggies 🥬.

I always start with a big base of greens (usually @josiesorganics arugula, baby lettuce mix, or spinach), add a protein (love @wholefoods salmon, shrimp, or lamb), add some healthy fats from avocados or nuts, and then add some yolky goodness and other veggies/toppings to keep things interesting.

All are also perfect meal prep options and hold up well in the fridge. Just add the avocado the day you plan to eat it.

🎈Чизкейк из авокадо без выпечки!
Состав:
Крем:
🔹3 очень спелых авокадо
🔹2 лимона
🔹150 грамм сливочного крема ( у меня Филадельфия)
🔹сахзам по вкусу
🔹10 грамм быстро растворимого желатина
🔹150 г кокосового масла, расплавленного
🔹¼ ч. л. экстракта ванили
мелко тертая цедра ½ лимона или лайма
Основа:
🔹50г сырого миндаля
🔹150 гр.сырого арахиса
🔹40г сырого пекана (если нет, то добавить арахиса)
🔹4 ст. л. кокосового масла, растопленного
Круглая форма для выпечки с бумагу для выпечки.
Приготовление:
1️⃣Чтобы сделать основу, кладем миндаль, арахис и орехи пекан в миску, заливаем водой и оставляем мокнуть в течение 1 часа.
Сливаем воду и помещаем пропитанные орехи в кухонный комбайн вместе с расплавленным кокосовым маслом. ☝️☝️☝️ Если хотите получить более насыщенный ореховый вкус, то орехи нужно не замачивать, а обжарить.
2️⃣Перемалываем, пока не получим крошку, как текстуру, которая слипается.
Помещаем эту массу в форму со съёмными бортами ( на дно кладём пергамент) и равномерно распределяем основу по дну и бортикам. Помещаем в морозилку на 20 минут.
3️⃣Теперь начинка! Очищаем авокадо и выжимаем сок из двух лимонов; это позволит авокадо не потемнеть. Переносим содержимое чаши в блендер вместе с сахзамом, сыром, расплавленным кокосовым маслом, экстрактом ванили и смешиваем, пока не получим гладкую текстуру.
4️⃣ Заливаем в полученную массу, предварительно растворенный в 50 мл. воды желатин и снова взбиваем.
5️⃣Вынимаем основание из морозильника и выливаем эту начинку на него. Возвращаем в морозильник еще на 30 минут, затем перемещаем в холодильник еще на несколько часов.
Аккуратно снимаем с торта жестянку, выкладываем на тарелку и украшаем лимонной и лаймовой цедрами.
Получается нежнейший и красивейший десерт! ☝️☝️☝️ Если хотите снизить калорийность продукта, то можно убрать из состава сливочный сыр или основу.
