Have fun playing with your food during the #holidays. Made this simple #plantbased hommage to the Grinch inspired by others, using #vegan mini marshmallows to share with friends. Two things I learned by making it myself.... 1. Get long toothpicks or you may need more than one. 2. Adults like playful excuses to eat healthy food. If you can't tell by my picture, just used green grapes, Bananas, strawberries and mini marshmallows on a toothpick.

Rice-less burrito bowl with easy+flavorful black beans, roasted sweet potato, sautéed garlicky corn kernels, cherry tomatoes, crinkle cucumbers, avocado and maple mustard yogurt dressing (oil-free options)🌱⠀
🌱Recipe black beans: Sauté 1 chopped large sweet onion in a little olive oil or veggie broth until translucent, about 7 minutes. Add 3 minced garlic cloves and 1 finely chopped (deseeded) small jalapeño and sauté another minute. Add 1 tsp chili powder, 1 tsp smoked paprika and 1/2 tsp cumin. Cook until fragrant, about 30 seconds. Add 1-15oz can rinsed and drained black beans (or 1-3/4 cups cooked black beans), 2 cups veggie broth or bean cooking liquid, 1 tbsp vegan Worcestershire sauce and stir. Simmer about 15 minutes, adding more broth or liquid as needed. Mash some of the beans with side of spatula while simmering to thicken the sauce. Remove from heat and add juice half lime. Adjust salt, lime juice and Worcestershire sauce to taste. Serve with chopped cilantro. 🌱Recipe dressing: whisk 1/4 cup unsweetened plain almond yogurt, 1-2 tbsp maple syrup (or to taste), 2 tbsp dijon mustard, 1 tbsp lemon juice, 1/4 tsp garlic powder, salt to taste. .⠀

Начнем с прекрасной находки: "Морковных чипсов с ламинарией и куркумой". Уже на упаковке нас привлекает надпись "100% vegan", а слоган "Здоровая еда дарит долгие года" заставляет не пожалеть 150 рублей на себя любимую/ого.
Состав почти идеален: морковь, семечки, ламинария, паприка, куркума, перец чили, соль.
Острота специй ощущается, но вполне терпимо, особенно для таких любителей погорячее, как ваша непокорная слуга.
Вес: 100гр, 455 ккал. Белков - 15, жиров - 34, углеводов - 16. То есть достаточно сытно, поэтому отлично зайдет в качестве быстрого перекуса на работе/учёбе.
Найдены в недавно открывшемся "Спаре" на Уралмаше.

We had a delightful vegan dinner at @basilperrysburg on Saturday night
Bruschetta as an appetizer, butternut squash ravioli and the vegan Truffle Shuffle pizza as an entree. We had mango raspberry sorbert dessert and then ordered a vegan salsiccia pizza to go for lunch the next day.

We appreciate Basil's nice selection of vegan entrees as well as their clearly-labeled menu.

Süßkartoffel mit Tahini - a match made in heaven 🧡.
Es muss nicht immer ein aufwendiges Gericht mit vielen Zutaten sein, manchmal sind es die basics, die am besten schmecken 🍠. Süßkartoffeln sind kleine Vitaminbomben und haben sehr viele Ballaststoffe. Die Klimabilanz von der normalen Kartoffel ist natürlich um einiges besser aber ab und zu darf es auch mal die Süßkartoffel sein. Getoppt mit Tahini (wenn ihr das noch nicht probiert habt, unbedingt ganz schnell machen 🤤) und in Hanföl massierten Grünkohl. Gesundes und sehr sättigendes Mittagessen, das super schnell zubereitet ist. Die Süßkartoffelscheiben müssen einfach 10-15 Minuten in den Backofen.

I went to a Thankschristmas party this weekend and the theme was “fair food”. I decided to make fair fries with malt vinegar and fried mushrooms. They were a big hit!! I made a batter out of plain organic soy milk and flour and then dipped it in breadcrumbs with some spices - garlic and season salt, you can add whatever you want though! ​Slice and roast sweet potato with olive oil, salt and pepper for 45 mins at 160
Wok fry broccoli & kale in coconut oil

Serve with:
Avocado

Curry Soup by @tastingtothrive_rd 💚 Warm and comforting bowl of soup filled with lots of veggies!

​To make 👇🏼:
Dice one yellow onion and saute on medium heat until translucent. Add 3 cloves of minced garlic and a 1 inch chunk of minced ginger, for about 2 minutes. Add veg of choice- I went with broccoli, cabbage + red peppers but usually add ribboned carrot and mushrooms as well. Add 1/2 block of diced tofu, diced. Saute for about 5 minutes, then add 1 can of coconut milk, 3 cups of vegetable broth, 1 tsp turmeric + 2.5 tbsp of curry powder (to taste). Simmer over low heat for 10-15 minutes. Meanwhile, cook noodles of your choice (I added buckwheat to this, but rice noodles are great too!). Add 1 tbsp of soy sauce + a small splash of rice vinegar (optional) + enjoy!

Steamed silky smooth tofu in a zesty & appetizing broth '潮州蒸豆腐' - Teochew style tofu.😘
This simple dish is packed with umami mushrooms along with slightly sweet tomatoes, tart plum & salty preserved mustard. Then, it is finished off with ginger & jalapeño for that spicy kick. All the flavors in one dish with minimal oil & serve warm with a bowl of rice. I hope you give this easy tofu dish a try & have a great #meatlessmonday friends!⁣🤗

Recipe (yields 3-4 servings)⁣
🌱Ingredients:
~ 16oz silken/soon tofu - drained well ⁣
~ 2 roma tomatoes, cut into wedges⁣
~ 1/2 cup mushrooms (used a mixture of softened dried Chinese & fresh baby oyster mushrooms)⁣
~ 1/4 cup sliced preserved mustard⁣
~ 1 tablespoon thinly sliced ginger⁣
~ 1 tablespoon thinly sliced red jalapeño⁣
~ 1 pickled sour plum/Ume⁣
~ vegetable stock⁣
~ toasted sesame oil, white pepper, soy sauce⁣

✅Cut tofu into 1/2 inch thick slices & lightly dab tofu with a paper towel to absorb extra moisture. Arrange tofu in a deep pasta bowl (enough to hold tofu & stock) then top with tomatoes, mushrooms, preserved mustard, ginger, red jalapeno & sour plum. Add enough vegetable stock so most ingredients are immersed in stock (allow some room as tofu will release its liquid during steaming).⁣
⁣✅Steam tofu dish for 8-10 mins over high heat or until tomatoes start to wilt. Add a drizzle of toasted sesame oil, soy sauce & a few shakes of white pepper before serving. Enjoy!⁣🥰

I used coconut yoghurt in this recipe so they are moist and fluffy without any oil, I also added a generous pinch of cinnamon for that cozy winter feeling 😉🥞⛄

Yoghurt cinnamon spelt pancakes: (makes 10 pancakes)
100g wholemeal spelt flour
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
1/2 tsp of cinnamon (or to taste)
120ml almond milk, unsweetened
1 tbsp apple cider vinegar
100ml plain coconut (or soy) yoghurt
2 tbsp maple syrup
In a mixing bowl combine spelt flour, baking powder, baking soda, salt and cinnamon. Add all remaining ingredients and mix until combined. Preheat skillet, grease it with some oil and bake pancakes over medium heat until golden brown on both sides.
