Easy vegan lunch

Always start with a base full of veggies, it can be raw or cooked 👌🏼 ⠀

Then add your carbs which can be anything from potatoes, to lentil pasta, brown rice, quinoa or buckwheat 💪🏼 ⠀

Then goes the protein! Something like smoked tofu, tempeh, or roasted chickpeas are awesome 🤤 ⠀

Top it off always with a sauce 😁 ⠀

This time I made an easy one with tahini, lemon juice and garlic together with some water blended until desired consistency is achieved 👍⠀ ⠀

baking is in season over here 👩🏻‍🍳🍫 i’ve been adding chocolate chips into almost all my recipes 💁🏻‍♀️ i made my first gingerbread recipe of the season, these chocolate chip gingerbread brownies!! it’s SO chocolatey, moist and have the perfect chewiness in the middle 😻
i used @fourthandheart ghee butter, giving the recipe moisture & flavor. ghee is made by melting regular butter, then removing the liquid fat and milk solids - making this product lactose free. ghee is great to cook & bake with at high temperatures since it has a high smoke point. it’s also shelf stable! now, what’re you waiting for? you should make this 🙌🏼

ingredients:
3/4 cup coconut flour
1/2 cup dark brown sugar
1/2 cup coconut sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp ginger
2 tsp cinnamon
1/2 tsp sea salt
1/2 tsp nutmeg
1/2 tsp cloves
1/2 cup @fourthandheart original ghee, melted
2 eggs
1/4 cup almond milk
1 tsp vanilla extract
3/4 cup chocolate chips

directions:
1. preheat oven to 350 F. prepare a 8 x 8 baking pan with parchment paper.
2. in a medium bowl, mix together coconut flour, sugar, baking soda, baking powder, ginger, cinnamon, salt, nutmeg and cloves.
3. in a small bowl, whisk together ghee, eggs, almond milk and vanilla extract.
4. pour wet ingredients into dry and gently fold together. mix in 1/2 cup chocolate chips.
5. add batter into baking pan, top with extra 1/4 cup chocolate chips.
6. bake at 350 F for 20 minutes.
7. remove from oven and allow to cool for 15 minutes before cutting into 9 bars. they taste SO good fresh, especially with a scoop of ice cream on top while it’s still warm. i dare you to try it 😛
**place the rest in an airtight container for 3 days or up to 5 days in the fridge.

SPAGHETTI SQUASH EGG NESTS⠀

1 medium spaghetti squash (can be cooked in advance)⠀
4-6 @peteandgerrys eggs⠀
Spray avocado oil⠀
Everything bagel seasoning ⠀

To cook the squash (I recommend cooking in advance. It’s great to have on hand for quick meals!) preheat the oven to 400F. Slice the squash in half and then cut each half in half again. You will have four sections. Lay the squash on a parchment-lined baking sheet. Spray with avocado oil. Bake for 40-45 minutes or until the skin is easily pierced with a fork. Remove from the oven and when cool enough to touch, remove the seeds and pull out the strands using a fork. ⠀

To make the 4-6 egg nests, take the about 1/2 cup of squash and make a nest. I recommend having a little squash in the middle with high edges to hold the egg in place. Crack an egg into each nest. Spray lightly with avocado oil. Place in a 400F oven for 15 minutes to set the whites with a runny yolk or continue to cook for more firm yolks. Remove from the oven and sprinkle with everything bagel seasoning! Enjoy! ⠀

My favorite easy weeknight dinner (10-15 minutes)


Grass-fed streak (I cook mine in ghee in a cast iron to rare/medium rare. 3 minutes on each side on high heat)
Salad mix (I either use the kale salad from whole foods or the veggies and greens mix from trader Joe's)
Sharp cheddar cheese (I am currently loving the New Zealand Grass-Fed from TJs)
Salad toppings (I have what came in the TJs mix), tomatoes, and @tessemaes honey poppyseed dressing

For the salmon:
Season wild Alaskan salmon filets with garlic, sea salt, and pepper. Heat avocado or olive oil on a pan. Add salmon, skin side up and cook 1-2 minutes on medium heat. Flip the salmon onto its skin. Cover and finish cooking 3-8 minutes (I usually do 6). Peel skin prior to serving and squeeze fresh lemon over the top.

Spaghetti 🍝
Noodles made out of squash, cooked Al dente because I like a little bite to my pasta. Marinara Sauce made with tomatoes, walnuts, basil, Portobello mushrooms, red onions, and Dr. Sebi approved Spices. Garnished with Brazil Nut Parmesan Cheese 👩🏻‍🍳

Avgolemono Soup (aka Greek Lemon Chicken Soup)⁣

Ingredients⁣
•1 tablespoon oil⁣
•1 onion, diced⁣
•6 cups chicken broth or chicken stock⁣
•1/2 cup arborio rice⁣
•3 eggs, lightly beaten⁣
•2 cups cooked chicken⁣
•2 lemons, juice and zest⁣
•2 tablespoons white miso paste (optional)⁣
•salt to taste⁣

Directions⁣
1.Add the chicken, chicken broth and rice in your VitaClay pot.⁣
2.Set on “Soup” for 1 hour.⁣
3.Slowly pour 1 cup of the hot broth into the eggs while whisking and then slowly whisk the egg mixture into the soup.⁣
4.In the last 5 minutes, add lemon juice and zest.⁣
5.When done, mix 1/4 cup of the hot broth with the miso paste and then mix the mixture back into the soup before seasoning with salt.⁣

❤️Many think of bell peppers as a vegetable since they are primarily served in more savory dishes rather then sweet... But they are actually a fruit. They are also the pepper that when dried is known as paprika. When a bell pepper is green it is actually considered unripe and that’s why it has a more bitter taste unlike the yellow, orange, and red peppers.

🧡Bell Peppers have a high amount of Vitamin C and just one bell pepper will give you 169% of your RDI. The high amount of Vitamin C also helps with absorption of iron from other foods. They are also packed with Vitamin B6, K1, potassium, folate, Vitamin E, and beta carotene. Which are great for red blood cells, bone, heart, nerves, and muscle health.

You hear the term “whole foods” thrown around a lot, but what exactly does it mean? Let me help.

It generally means foods that are the least processed, and either come from the ground or once had a heartbeat.
.
This includes things like:
-all vegetables (spinach and all other greens, broccoli, cauliflower, peppers, asparagus, etc.)
-all fruits (apples, citrus fruits, berries, etc.)
-nuts, seeds, beans, and legumes
-other fats like avocado, olives, and to some extent oils like avocado oil, olive oil, etc.
-whole grains (oats, wheat flour, bulgur, brown rice, farro, quinoa, etc.)
-all animal protein sources (they once had a heartbeat and generally eat from the earth)

Your goal with whole foods is to eat more of them throughout the day, having them make up about 80-90% of your meals. This helps you fill up more on fiber-filled foods via fruits, vegetables, and whole grains, which will make you less hungry while also providing you with more nutrients.🤗
.
Eating more whole foods can also help you focus on eating less things out of a box or package and eating more foods as close to their natural state. But, with some flexibility, you can have about 10% of your food include some of the more processed foods for fun, which can help you stay on a better and more manageable course of eating healthier (or “better”) options. 🙌 This is a more sustainable method to eat well life-long without losing your mind.🤪

Baked Warm Spiced Rice Porridge with Vanillabean🌟🌱 Christmas time always reminds me of the smell of mixed spices and the aroma of vanillabean rice porridge as it bubbles away baking in the oven. It can be eaten warm or cold and topped with many different fruits, nuts and yoghurt to make a breakfast bowl or dessert. I added almond yoghurt, roasted almonds, cocoa nibs, blueberries and a dash of nutmeg drizzled with date syrup on top. The spices in this dish both cinnamon and nutmeg contain amazing health benefits. Nutmeg contains an array of antioxidants, these help combat free radicals in the body which cause oxidative stress that cause cellular damage. Sunday my wife (@vegan.blooming) and I decided to change up our eating habits. Basically to get back on our willpower wagon. Since last November we’ve been on a vegan junk food kick. Got out of the habit of yoga practice and movement of the body as well. Add to that a car accident in June. Needless to say our bodies have had a tough go, and we haven’t helped at all. Switching it back to organic/non-GMO, gluten-free, and sugar-free. Good news is my wife makes the best vegan chili ever and coconut palm sugar doesn’t count as cane sugar 😃 We’re also not drinking anything 2 and a half hours after eating or 45 minutes before eating, and I’ve REALLY noticed a difference in my body. Also, we started our yoga practice last week. The magic of turning raw fruit to delicate vegan desserts @shu.restaurant Passionfruit cheesecake

Creamy polenta with sunflower cream, freshly foraged chanterelles, shiitakes & leeks from @imperfectfoods 🌱 I sautéed the mushrooms with leeks and garlic in my cast iron pan to give them a nice sear on the outside . Then seasoned them with sea salt and pepper. For 1 cup dry polenta I used 2 cups of vegetable stock, 2 cups of @foragerproject cashew milk and 3T @miyokoscreamery vegan butter. Once the polenta was finished I then added a sunflower cream (blended sunflower seeds, garlic, cashew milk, salt and pepper) to give it a rich creamy finish. This polenta was full of flavor and the sautéed mushrooms were a perfect earthy addition.

😍Fluffy chocolate cake with chocolate frosting! 📷 by @byanjushka

Ingredients cake (20cm):
-200ml soy milk
-1EL apple cider vinegar
-2TL vanilla extract
-75g applesauce
-75g rapeseed / coconut oil or vegan butter (melted)
-200g (spelled) flour
-150g sugar
-50g baking cocoa
-2 1 / 2TL baking powder
-1 / 2TL salt ▶ ️Ingredients chocolate frosting:
-1Dose full fat coconut milk (alternatively coconut whipped cream)
-180g dark chocolate
-30g powdered sugar (optional) ▶ ️Directions
Preheat oven to 180 degrees.
Lightly grease 2️⃣20cm baking tin, cover the bottom with baking paper.
3️⃣Mix soy milk, cider vinegar, vanilla, applesauce and oil.
4️⃣Mix flour, sugar, cocoa, baking powder and salt in a second bowl and slowly add the liquid ingredients until everything is mixed.
5️⃣Dough in the form and bake about 45-60 min (stick test!), Remove from the oven and let cool completely.
6️⃣For frosting, heat the coconut milk and chocolate in a saucepan and stir. Optionally sweet with powdered sugar. Allow to cool.
7️⃣Put the frosting into the mold on the cake and let it solidify in the fridge (about 2-3 hours).
8️⃣Always store the cake always refrigerated so that the frosting does not soften

Black bean and Corn Burgers 🥑😍🍔

Smokey black bean + corn burger: In a food processor, pulse 1-1/2 cups black beans until partly mashed with some whole beans remaining. Boil 1 large corn on stovetop and remove kernels with sharp knife once cooked. (Even better if you can roast the corn over a gas burner.) Combine in a large bowl: mashed beans, corn kernels, 1 finely diced large red onion, 2 large handfuls baby spinach leaves (roughly chopped), 1/2 cup cilantro (chopped), 2 tbsp tahini, 2 tbsp coconut aminos or low-sodium tamari/soy sauce, juice 1 lime, 2 tsp smoked paprika, 1 tsp garlic powder, 2 tsp ground cumin, 1-2 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add oat flour until sticky enough to form patties (no more than 1 cup). Use hands to make roughly 7 burger patties. They shouldn’t be too thick or they won’t cook as well. (Optional: brush surface of the patties with a little olive oil.) Bake on lined baking sheet at 375F about 25 minutes, flipping half way. (Or you can even air fry these at 400F about 15-20 minutes)

Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add sprinkle red chili flakes. Serve with sweet potato fries and enjoy

lunchin’ in my sweatpants 💁🏻‍♀️ i made this baked rosemary garlic tomato salmon with green beans and @eatbanza chickpea rice. i’m working on putting together my favorite ways to bake my salmon as a blog post - this is on my list 👅
to make: preheat oven to 425F and brush salmon with olive oil & sprinkle of salt and pepper. add 1/2 tsp rosemary, 1/2 tsp minced garlic & 1 tsp drained capers. top with halved grape tomatoes. bake for 15 mins! while baking, i cooked the rice and green beans ☺️
